On Friday, I went to my friend Kristina’s house for the day and she made me a wonderful dinner! It was so delicious that on Sunday I made it for the boyfriend and his roommates, and they loved it! I thought since it was so amazing I should share it! I call it Kristina’s Chicken Enchiladas (creative, I know):

Makes 8 servings
about 1/2 pound of chicken
1 can of refried beans
1 box of spanish rice
1 can of corn
1 can of red enchilada sauce
8 tortilla large tortilla shells
grated cheese
desired amount of sour cream, salsa, and lettuce

1. season chicken with taco seasoning and bake it in the oven on 350 until cooked thoroughly
2. while the chicken is baking, cook rice and heat up beans and corn
3. once the chicken is cooked, shred or dice it up to desired size
4. warm tortillas in the microwave for about 10-15 seconds
5. put a generous amount of beans, corn, chicken, rice, cheese, and a couple of spoonfulls of enchilada sauce onto the tortilla shell, roll them, and place them in a glass baking pan (which you may want to lightly grease).
6. Once all of the enchiladas are in the pan, pour the remaining enchilada sauce over the top and cover with cheese. Bake in the oven on 350 for 10-20 minutes, based on desired chrunchiness of the shell
7. Remove from oven and top with lettuce, sour cream, and salsa. Enjoy!
You could also include olives in the enchilada or as a topping. These enchiladas are so amazing and I hope that someone tries them!


Yes 2010 is here, crazy. I have not made a new year’s resolution and I am not sure if I am going to, resolution schmesolution. I am just trying to enjoy these last few days of my break and I am hoping that my January stays pretty low key.
Snowboarding with the boyfriend was really fun. I fell a lot, which was expected, I have a very soar butt, which was also expected, I did really well after we ate lunch, not expected. I was really happy that after we ate lunch I spent hardly any time at all on my butt and I spent most of it actually snowboarding. I had a great time overall and I am really excited for the next time that we go, which will be soon.

I cannot believe it is Christmas and in a few days it is going to be 2010…weird. Today has been an extremely lazy day just hanging out with our new goodies brought to us by Santa. I got a new camera, which is pretty amazing, so I have pretty much just been messing around with the features and taking pictures. A funny story….
In mid-November my mom bought my brother (who is 12) an Ipod for Christmas. She was really excited about it and she purchased it on ebay. I have owned 2 ipods, both purchased on ebay and I have not had any problems. Today when my brother opened it to put some music on it, I was confused because it does not look like my ipod; needless to say, it is not a real apple ipod, although it says apple ipod right on it. Luckily my mom should be able to return it because she is covered by ebay’s protection thing and she is just going to buy him one at the store tomorrow…which would have been the best idea to begin with. So my poor brother got a fake ipod for Christmas. It will all work out in the end though….
The boyfriend is coming home from his Disney World vacation tomorrow. I cannot wait, I have missed him so much. He said that it was weird waking up this morning because it was not Chirstmasy at all and although it is fun to be in 80 degree weather in December, it is much more fun to be in Christmas-like weather at Christmas time.

I am just sitting here listening to my new music, eating some dinner, and enjoying a quiet evening. I had a fabulous weekend going to a wedding, hanging out with the boyfriend (who is on his way over here right now with some skinny cows, yum!), and getting to see my sister and her kiddies. This time by myself and this wonderful music is just allowing me to reflect on the things that are happening in my life right now and I am so fortunate! First of all, I have the greatest best friend ever (Kimmi), an amazing family, and a wonderful boyfriend. However, I think that I am most fortunate because I get to go to nursing school in the fall (woohoo!) and I cannot wait to move! My room is just filling up with things that I am taking with me and as more things on the dorm room wish list get crossed off, I think of more things I need and want. I will definitely be posting pictures on here when I get settled but it is pretty much going to be amazing!

Also, I have been sewing like a maniac so I will be posting some pictures of my finished projects soon as well as pictures from all of my vacations this summer; I still have 2 more coming! I have a lot of drafts as well, I am terrible, so more exciting posts will be coming…I promise!
